Banana and Walnut Loaf
A delicious cake, very easy to make and good to serve at tea-time or with coffee. A good way to use up overripe bananas.
This is one of Wendy's Recipes
Ingredients 5oz (150g) Sugar
2oz (60g) Margarine
3 eggs
3 bananas , mashed
8oz (240g) Self Raising Flour
6oz (180g) Walnuts, chopped
A small pinch of salt  

Equipment 9 inch (22cm) loaf tin
Mixing Bowl  

Method 1. Preheat the oven to 350F (gas mark 4 or 180C), and grease the loaf tin.
2. In a mixing bowl, cream the sugar and margerine.
3. Add the eggs and beat well, then beat in the mashed bananas.
4. Sift the flour and salt into the mixture and beat well until all the flour is incorporated.
5. Stir in the walnuts.
6. Pour the mixture into the loaf tin and bake for 1 hour,or until the loaf is done. Test by inserting a warm dry skewer into the centre of the loaf. If it comes out clean the loaf is ready.
7. Turn the loaf out of the tin onto a wire cooling rack, and allow it to cool before slicing.  

If you're not worried about the calories, it's even more delicious spread with butter.
